Blueberry Coconut Smoothie

It’s no secret that I love smoothies, especially after a run. They’re quick and easy to prepare, and are a great way to pack a lot of nutrition into a single meal. But I admit I’m sometimes a bit more focused on what I put in my smoothies than in how they actually taste.
My family? Not so much.
For a smoothie to meet their approval, it has to look and taste amazing.
They’re not all that concerned about whether or not the smoothie is high in antioxidants because it’s loaded with blueberries, rich in omega-3s from the chia seeds and hemp seeds, or a perfect post-workout shake because it is high in electrolytes from the coconut water and banana.
It just has to taste good.
I knew this Blueberry Coconut Smoothie was a winner as soon as my boys said, “Mom, you should put this one on your website!”
And I’ve done just that.
Regardless of whether you try it because you love the color, or because it tastes great, or because it is a great recovery shake and the perfect way to start your day, I hope you love it as much as we do.
Because in the end, that’s what it’s all about.
Ingredients
- 1 cup coconut water
- 1 handful greens (I love spinach or collard greens)
- 1 cup frozen organic blueberries
- 1 frozen banana
- 2 tablespoons hemp seeds
- 1 tablespoon chia seeds
- Sprinkle of granola, coconut flakes or berries (optional)
Instructions
- Place first six ingredients in a high speed blender and blend until smooth and creamy. If desired, top with a sprinkle of granola, coconut flakes, or berries.
