Vanilla Avocado Power Smoothie

My Mondays are packed and I’ll bet yours are too. There’s barely enough time to eat, and no time to sit down. Mondays require a lunch that is healthy, can be prepared quickly, and can be eaten on the run.
If your Mondays look anything like this:
Help get the kids off to school. Meet a friend for our weekly two hour run. Arrive home with just enough time to grab a quick shower and a bite to eat. Rush off to school to volunteer in 2nd grade classroom. Run errands and hit the market to buy what we need for the next few days. Pick boys up. Drop boys off. Two baseball practices. Dinner. Homework. Bedtime. Pack lunches. Prep for client sessions the next day. Fall into bed. Whew!

What was in my power smoothie today?
Collard greens, because they’re packed with vitamins and minerals including calcium, iron, and potassium. Chia seeds, because they’re a complete protein and are rich in omega-3 fatty acids and a long list of essential nutrients. Almond butter and avocado for healthy fats. A little maca for stamina. And a scoop of vanilla protein powder to provide long-lasting energy. (I like Sunwarrior’s Warrior Blend Raw Vegan Protein – Vanilla).
If you’re fortunate enough to have a Monday that is slightly less crazed, feel free to omit the protein powder and use a bit of vanilla extract instead. Either way, you’ll be ready for whatever the day might bring.

Ingredients
- 1 cup almond milk
- 2-3 large collard green leaves, stems removed
- 1/2 avocado
- 3 Medjool dates, pitted
- 1 tablespoon chia seeds
- 1 tablespoon almond butter
- 1 scoop Vanilla Sunwarrior Warrior Blend Vegan Protein Powder (or 1/2 teaspoon vanilla extract)
- 1 teaspoon maca
- 1/2 teaspoon cinnamon
- 5 ice cubes (or to taste)
Instructions
- Add all ingredients to a high speed blender and blend until smooth and creamy. Enjoy!
