Green Greatness

I received red mustard greens and tatsoi in our CSA basket this week. I did a quick recipe search, but couldn’t find one right away that I thought my family would love, so I decided to juice them instead.
I love juicing because it is an easy way to get an abundance of vitamins and minerals directly into your bloodstream. The energy you get from a glass of freshly juiced produce is amazing, and juicing provides a whole host of health benefits as well.
Mustard greens are peppery in taste, though, so I wasn’t sure what to expect. And I wasn’t sure this combination would pass the family taste test. To my surprise, my husband and nine year old really liked it. And while my eight year old is not yet a fan of juicing, he did take 5 big sips, so we’re definitely moving in the right direction!
I’ll definitely be making this again. And do you know why? Because a glass of Green Greatness will:

Green Greatness
Serves 2
Ingredients:
1 bunch red mustard greens
1 small bunch tatsoi
8 romaine leaves
4 swiss chard leaves
1/2 bunch parsley
1 lemon, peeled
2 pears
1 1/2″ piece of ginger root
Directions:
Wash and prep all ingredients. Juice per your juicer’s instructions. Enjoy!
*Use organic ingredients if possible
